Lane Gallagher

Congratulations to Lane Gallagher for graduating Cum Laude from the Master of Science in Health and Nutrition Education program. Lane also received a Bachelor of Arts degree in Speech Communication from Colorado State University. A deep interest in how our environment influences our health and well-being led Lane to focus on the Blue Zones Project. A former senior manager with Nestle Foods in CA and CO, Lane recently led a direct sales and marketing efforts for the introduction of Pre-Diabetes Centers of Fort Worth. As a Cooper Institute Certified Personal Trainer who also is a nutrition, wellness, and weight management consultant, Lane has taught countless nutrition classes at schools and churches throughout Fort Worth and has served on the advisory board to FitWorth, Mayor Price’s Healthy City Initiative. Her thesis is entitled Blue Zones Project – Sector Sustainability Plan. Keep up the good work, Lane!

Kali Sink

Congratulations to Kali Sink for graduating Summa Cum Laude from the Nutrition Consultant certificate program. Kali’s interest in nutrition started in the food industry, where she managed coffee shops, waited tables,  and read nutritional panels and cookbooks during down times. When her husband was diagnosed with Ulcerative Colitis she plunged into the science behind gut health and digestion and entered Hawthorn to expand her knowledge and learn how to help others in similar situations. Kali is passionate about helping people repair their digestion and overall health by healing the gut. In addition to client work, Kali manages Boston-area accounts for an organic super food company, which keeps her active in the nutrition industry. When Kali isn’t working with clients, writing her blog, calling on her Boston stores, or preparing for the board exam in holistic nutrition, she can be found hanging out with her dairy goats or surfing with her husband. Annabeth Goss

Congratulations to Annabeth Goss for graduating Summa Cum Laude from the Nutrition Consultant certificate program. Annabeth is passionate about health, specifically about assisting parents help their children who have nutritional needs. Her 4-year-old daughter, Abigail, fought cancer for several years and it startled her to find such a glaring lack of holistic help for children. Annabeth entered Hawthorn University to increase her knowledge so that she is able to empower parents who want their children to thrive by using nutritional assessments, meal planning, and individualized supplementation. She believes that wellness is a personal journey, different for each individual, and possible because of the body's innate and incredible desire and design to be healthy. Annabeth loves guiding people along their path to wise choices and well-being in their health, for a vibrant and energetic life! Best of luck, Annabeth!

Peggy Yeung

Congratulations to Peggy Yeung for earning Summa Cum Laude upon completing the Master of Science in Holistic Nutrition degree. She also holds a Bachelor of Science degree in Banking and International Finance from The City University in London, U.K. Peggy worked for major U.S. investment banks for almost twenty years in various locations including Hong Kong and Singapore during the initial part of her career. She wanted more time to spend with her three children and family and researched a new career to expand her passion for wellness and entered Hawthorn. At Hawthorn, she experienced an amazing journey and discovered how dietary choices have a profound influence on health. Peggy is a strong believer in the saying that “food is information and it has the power to change who we are as a person”. Peggy is currently working as a lifestyle coach focusing on nutrition and holistic health. She is passionate about educating people on diet and lifestyle changes and often filled with joy when she sees her clients get well, become more energetic, or just feel a sense of well-being. Her thesis is entitled The Roles of Essential Fatty Acids in Preventing or Slowing Down Progression of Alzheimer's Disease. Continue the good work, Peggy!

Elizabeth Howes

Congratulations to Elizabeth Howes for graduating Summa Cum Laude from the Master of Science in Health and Nutrition Education program. Elizabeth also holds a Bachelor of Arts degree in Communications from California State University, Chico. After receiving her undergraduate degree, Elizabeth spent several years working with technology start-ups in San Francisco. Despite the vital lessons she learned, the kitchen kept calling her home. Years of culinary training and hands-on experimentation as a private chef and freelance food writer helped craft her focus today: highly-creative, health-driven, and wildly flavorful food. When she’s not in the kitchen working on a new recipe or concept, she is immersed in writing about food, culture, travel, and wellness. She also works in private practice helping dynamic female leaders achieve optimal performance and well-being. Elizabeth’s unique wellness philosophy is rooted in design and aims to bridge the gap between the foundation of food (form) and how it affects our bodies at the cellular level (function) to support well-being. Elizabeth was a finalist in the second season of Next Food Network Star. She has also been featured in the James Beard Foundation’s JBF Notes, mindbodygreen, Shape.com, Prevention Magazine, Edible magazine, and Slow Food, among others. Her first book, “The Modern Salad”, was released in August 2016.
